How can a caravan manufacturer or repair facility be made to fix a problem under warranty?

What would constitute proof of notification? My concern comes from the fact we lodge the defect via their “portal”, receive no confirmation , leaving it our word against theirs. Would a screen capture of the entry screen suffice which included the date/time in the lower right corner?

Yes, that should be sufficient. When you formally write to them, I would include a copy of the screen shot advising this was when they were first notified and how long you are waiting for resolution.
