It has been over 50 years since I started working in grocery stores, and they were simpler days, but we still had a few tricks: high profit items at eye level, dairy and bakery way at the back of the store, bands of colours in each aisle to give an impression of focus on certain areas, and of course the impulse buying areas. We slowed down shopping carts by putting stacks of product, often unrelated to the aisle, on things we called aisle stacks, as slower customers tended to buy more. There would be more if I thought more about it.
