Chef's Tips On Cooking Curries

It’s at least 40 years since I asked my father what the weight of an egg was supposed to be.
My father was a chef pastry cook, he would work enormous quantities of ingredients, the weight of unshelled raw
eggs would be in terms of Kilograms.

I like to use different spices in my curries & often vary the amounts of some spices & get different flavours so curries do not all taste the same
