Very true, but as a humble cook, if the recipe book for Christmas Cake says glacé cherries, my childhood memories tell me ‘red’!

Why Glacé cherries? It’s a century old method used to preserve cherries. The huge amount of sugar in them is unhealthy, but then most methods of preserving food before refrigeration are unhealthy: just think of fish and meat preserved with salt.

Most of us just use a handful of red cherries in the mix to make that cake look Christmassy, or place them on top of a cake to transform it into a Birthday Gateau!
