Here is the response (finally) from Specsavers, with the help of Choice:
"Thank you for writing to Specsavers Chadstone on 31 May 2018. We apologise that you have not received a reply to your letter and we have followed this up with the store to confirm whether the letter was received and if it was, why a response was not provided.

In relation to your query, we can assure you that all images taken using the ‘Digital Mirror’ and ‘Virtual Dispensing Toolbox Measurement’ iPad Apps during frame selection are not saved on our customer database. The images taken are either erased as soon as the applications are closed or, in some cases, can be saved to the iPad’s local storage when consultation with a Specsavers colleague may be required.

For your information, the GDPR only applies to consumers located in the European Union. The privacy legislation that applies to consumers located in Australia is the Privacy Act 1988.

Specsavers Pty Ltd and its Australian Stores at all times seek to comply with the Privacy Act and the Australian Privacy Principles in Schedule 1 of the Privacy Act. There is currently no right to erasure of personal information in the Australian Privacy legislation.

Actually the GDPR I think only states that the person needs to be an EU citizen, ie they have the right of abode in the EU by naturalization or birth. So in my belief if you are a dual citizen of both the EU and Australia the GDPR rules should apply to data stored in the EU.

From the Regulation:

“(14) The protection afforded by this Regulation should apply to natural persons, whatever their nationality or place of residence, in relation to the processing of their personal data. This Regulation does not cover the processing of personal data which concerns legal persons and in particular undertakings established as legal persons, including the name and the form of the legal person and the contact details of the legal person.”
