March 2024 Food Champions Challenge : Your cheap to prepare " go to " meals

Another go to that is tasty and cheap is the following stir fry . Rice ,3 cups pre cooked . About $2 .Piece of top side beef $4. . Watties or Coles Chinese stir fry Vegies $2.50 a pack . 1 red onion $1 . Bean shoots $2 . Pineapple pieces $1.80 . Canola oil . Sesame seed oil . Some Five spice and salt to taste .

I cook the rice early in the morning and let it cool and refrigerate . There is enough for 6 servings so it can be used the next day for a mid day meal etc .

Tin of tomatoes, tin of tuna, bag of frozen spinach , chilli flakes. Bung in a bowl, into microwave, heat, eat.

Quick & cheap “go-to” meal. Splash of Olive Oil in pan, fry diced onion, drop in a kilo of beef mince, when cooked add relish, boiling water, vegetables, simmer till tender and reduced. Feeds 2x4 meals.

Mince - our butcher makes it without much fat or gristle - we’re lucky.
Relish - home made - I use a small jar of fruit chutney + a large jar of savoury - mustard, cauli chutney
Veg - fresh or frozen or leftovers
Additions - you can put in rice, lentils, beans etc if desired.

Can use the liquor from boiling corned meat etc and leave out the water and relish.
